2 3/4 cups flour
1 tsp. baking soda1/2 tsp. baking powder
1/2 tsp. salt
1 cup butter, softened
1 1/2 cups sugar
1 egg
1/2 tsp. vanilla extract***
1 to 1 1/2 tsp. lemon extract***
1 Tbsp. dried lemon peel***
1/2 cup sugar for rolling
Preheat
oven to 350 degrees. Line cookie sheets with parchment paper. (I don’t line my
pans. I use Air Bake Pans. These slide
of the pan so easily.)
In
a small bowl, stir together flour, baking soda, baking powder, and salt. Set aside.
Using
a mixer, beat together the butter and sugar until smooth and very fluffy.
Beat
in egg, vanilla, vanilla extract, lemon extract and lemon peel.
Gradually
blend in the dry ingredients.
Roll
rounded teaspoonfuls of dough into balls and roll in sugar. Place on cookie sheets about 1 1/2 inches
apart.
Bake
8 -10 minutes, or until lightly browned.
Let
stand on cookie sheet two minutes before removing to cool on wire racks.
***NOTES:
I increased vanilla to 1 1/2 tsp. and no lemon extract (I didn’t have any on
hand), with 1/2 tsp. dried lemon peel.
