JUDY'S TUNA ISLANDS

1 (7 oz.) can tuna, flaked
2 eggs, beaten
1 (14 oz.) can evaporated milk
1/4 tsp. salt
1/2cup Cheddar cheese, grated

Combine tuna, eggs, evaporated milk, salt and Cheddar cheese in bowl.  Using a small measuring cup, pour into greased muffin cups, filling almost to the top. 

Bake at 350º for 30 minutes.  Serve hot with creamed peas over top.  Can sprinkle with crushed potato chips if desired. 

Creamed Peas:

            1 (10 oz.) pkg. peas
            4 Tbsp. butter
            2 Tbsp. flour
            1 cup half & half
            1/2 tsp. sugar
            salt to taste

To prepare creamed peas, cook peas for 3 minutes and drain.  Melt butter over medium heat and stir in flour.  Gradually add half and half, stirring constantly, until thick and creamy.  Add more milk if necessary to get right consistency.
